Batata Harra: Middle Eastern Skillet Potatoes
This tasty potato dish comes from
fresh herbs, plant-based, potato, spicy, vegan
skillet (preferably Saladmaster)
medium-sized gold potatoes
cooked and cubed
crushed red pepper flakes
chopped fresh herbs
cilantro, parsley, dill, or mint
salt and pepper
Heat oil in a skillet.
Cook garlic, red pepper flakes, and coriander seeds on medium heat for 2-3 minutes.
Add turmeric and lemon juice.
Add the (cooked) potatoes and coat with mixture.
Add fresh herbs and cook a few minutes more.
Remove from heat and add salt, pepper, more red pepper flakes (if desired), and top with fresh herbs for garnish.
Serve warm or at room temperature
Leave skins on potatoes to retrain more nutrition and save time.
