1/4 c medjool dates, pitted and halved
a couple pinches of cinnamon
a small pinch ground ginger
3 Tbp cold water
a pinch sea salt
2 tsp milk or nut milk
scant Tbl butter
Place dates, cinnamon, ginger, water in a Saladmaster 1 qt pan. Put on lid, cook on low for 5 min.
Crack eggs into bowl with salt and milk. Beat with fork until fluffy.
Put gourmet skillet on low until hot, Add butter. When melted and bubbling, add dates and fry for 2 min. Space out evenly in pan and pour eggs in, spreading evenly.
Cook until almost set, fold in half, lightly press down.
Dust with cinnamon before serving.
