Ingredients
  

  • ¼ cup Medjool dates, pitted and halved
  • A couple pinches of cinnamon
  • A small pinch of ground ginger
  • 3 tablespoons cold water
  • 2 eggs
  • Pinch of sea salt
  • 2 teaspoons milk or nut milk
  • Scant tablespoon butter

Method
 

  1. Combine dates, cinnamon, ginger, and water in a small pan. Cover and cook on low for 5 minutes.
  2. Crack eggs into a bowl with salt and milk. Beat with a fork until fluffy.
  3. Heat a skillet on low and melt the butter. Add the softened dates and fry 2 minutes, spreading them evenly in the pan. Pour in the eggs, spreading evenly.
  4. Cook until almost set, fold in half, and press down gently.
  5. Dust with cinnamon before serving.
