Cabbage, Beet, and Date Salad

For the salad:

2 raw beets, grated on cone #2

2 cups red cabbage, grated on cone #2

1/3 cup Medjool dates, pitted and chopped

1 bunch parsley and/or mint, finely chopped

For the dressing:

3 Tbs olive oil

3 Tbs lemon juice, and zest (cone #1)

1/2 tsp salt

1/2 tsp pepper
