Broccoli Grape Salad

Ingredients
  

Dressing
  • ¾ cup raw cashews, soaked
  • ¼ cup water
  • 2 tablespoons pure maple syrup
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon minced garlic
  • Heaping ½ teaspoon sea salt
  • Freshly ground black pepper
Salad
  • 2 large broccoli crowns, chopped
  • 1½ cups red grapes, halved
  • ⅓ cup roasted salted almonds, finely chopped
  • ¾ cup diced red onion
  • ⅓ cup dried cherries or raisins

Equipment

  • Blender or high-speed blender
  • Large mixing bowl
  • Cutting board
  • Chef's knife
  • Measuring cups and spoons
  • Colander

Method
 

  1. Soak cashews in water 2 hours or overnight (or 10 minutes in hot water if using a high-speed blender).
  2. Drain and blend with remaining dressing ingredients until smooth and creamy.
  3. Combine broccoli, grapes, almonds, red onion, and dried cherries in a bowl. Add dressing and toss thoroughly. Season to taste and serve chilled.
