Lime Cilantro Rice

Fragrant, zesty rice that upgrades any taco night or grain bowl — basmati rice simmered with garlic and coriander, then finished with fresh lime and cilantro right before serving to keep everything bright.

Ingredients
  

  • 1 small white onion, diced
  • 4 garlic cloves, minced
  • 2 cups white basmati rice
  • 4 cups water + 2 bouillon cubes
  • 1½ teaspoons salt
  • 1 tablespoon ground coriander
  • 1–2 limes, zest and juice
  • ½ cup cilantro, chopped
  • 3 scallions, sliced

Equipment

  • Medium saucepan with lid
  • Cutting board
  • Chef's knife
  • Citrus zester
  • Citrus juicer
  • Measuring cups and spoons
  • Wooden spoon
  • Fork

Method
 

  1. Sauté onion and garlic over medium heat until fragrant and tender, 4–5 minutes.
  2. Add rice and sauté 1–2 minutes more. Stir in coriander, half the lime zest (reserve the rest for garnish), and salt.
  3. Add water, cover, reduce to low, and simmer 20–22 minutes.
  4. Fluff with a fork, squeeze in lime juice, and toss in cilantro and scallions just before serving.
