Sweet Potato Chocolate Chip Muffins

Note this recipe is flour-free. It will be moister and look differently from the picture.

Ingredients

1 sweet potato (shredded on cone #1)

1/2 teaspoon cinnamon

1/2 teaspoon baking soda

2 Tablespoons unsweetened coconut flakes

pinch of salt

2 eggs

1/2 teaspoon vanilla extract

2 Tablespoons honey or maple syrup

5 Tablespoons chocolate chips*

*Enjoy Life brand is dairy-free

 

Instructions

Preheat oven to 375.

Combine dry ingredients. Add wet ingredients and mix. Add chocolate chips.

Spoon into muffin tins (with paper cups) 3/4 full. Bake 20-25 minutes.

Let muffins cool for 5 minutes. They will be moist.
