Ingredients
- 3 tbsp olive oil
- 1 pc lemon juice plus zest
- 1 tbsp honey or maple syrup
- 1 clove garlic
- 1 tsp cinnamon ground
- 2 tsp cumin ground
- 1.5 tsp sea salt
- 1 cup pumpkin seeds
- 1/2 head red cabbage
- 1 cup dried black mission figs chopped
- 1 bunch carrots
- 1 cup fresh parsley chopped
- 1 cup fresh mint chopped
Instructions

Whiskdressing ingredients together and set aside.

Place cabbage, carrots, and herbs in a bowl.

Lightly toast pumpkin seeds until fragrant.

Add dressing, pumpkin seeds, and dried figs to salad and toss. Let rest for 30 min for flavors to meld.
