Chia Seed Fig Pudding

A make-ahead breakfast or dessert that couldn't be simpler — coconut milk and chia seeds gel overnight into a creamy pudding, warmed with a touch of vanilla and cinnamon and finished with fresh figs. Prep it before bed and wake up to something that feels like a treat.

Ingredients
  

  • 2 cups coconut milk or almond milk
  • ½ cup chia seeds
  • ½ teaspoon vanilla extract
  • ¼ cup (or less) maple syrup, or stevia to taste
  • Optional: ¼ teaspoon cinnamon or cardamom

  • Whisk
  • Measuring cups and spoons
  • Jar or airtight container
  • Serving bowls

Method
 

  1. For a smooth version: blend all ingredients on high for 1–2 minutes.
  2. For a classic chia texture: blend everything except the chia seeds until smooth, then whisk in the chia seeds by hand.
  3. Pour into a jar and refrigerate at least 4 hours, or overnight, until gelled.
  4. Top with fresh figs before serving.
