Date Tahini Energy Balls

Ingredients
  

  • 1 cup whole almonds, plus 2 tablespoons ground almonds
  • ¾ cup Medjool dates, pitted
  • 2 tablespoons tahini
  • ¼ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • Pinch of sea salt

Equipment

  • Food processor
  • Measuring cups and spoons
  • Small bowl (for ground almonds)
  • Airtight container

Method
 

  1. Process all ingredients except the ground almonds until they come together in a ball — mostly smooth with a bit of texture.
  2. Roll into 16 one-inch balls (keep a bowl of water nearby to wet your hands if the mixture sticks).
  3. Roll each ball in the ground almonds for a fine, even coating.
  4. Chill in an airtight container for at least an hour.
