Date Tahini Energy Balls

1 c whole almonds, plus 2 Tbs ground almonds

3/4 c Medjool dates, pitted

2 Tbs tahini

1/4 t cinnamon

1/4 t vanilla extract

a pinch sea salt

Food process all ingredients except the 2 Tb ground almonds. Blitz until they come together in a ball.  (mostly smooth with some almond grains for texture)

roll into 16 balls, 1 in in diameter

(have bowl of water handy to wet hands because mixture may stick)

spread almonds on plate and roll ball until they get a fine even coating.

Place in airtight container and chill for one hour.
