BBQ Trumpet Mushroom & Jackfruit (pulled pork sandwiches)

5-8 king oyster mushrooms
2-  14 oz. cans Jackfruit
1/2 red onion cone #3
2 cloves garlic minced

spices & sauce mixture
1 tsp smoked paprika
1/4 tsp salt
1/4 tsp cayenne pepper

1 tsp. ground cumin
1 tsp. chili powder
11⁄2 tsp. liquid smoke
1⁄2 cup vegan BBQ sauce (your favorite store bought or homemade
kind)

Buns for pulled pork sandwiches

Instructions
Shred mushrooms with a fork

Combine spice sauce mixtures  in a bowl

Drain and rinse the jackfruit. Squeeze out excess moisture. Add the oil to a large frying pan or skillet over medium-high heat, and when hot add the onions and garlic. Sauté until the onions
are tender and beginning to brown, about 5 minutes. Add in the mushrooms & jackfruit cook until browning begins 8 mins- Cover and continue to cook another 2 minutes  Pour  BBQ sauce spice mixture on top and cook with lid off for 5 mins Until it looks delicious and golden,

Slaw for serving: Quick Slaw Instructions
1/4 head purple cabbage cone #4
2 carrots cone # 2
3 T veganaise
Juice 1/2 lemon
Cut cabbage on cone # 4 & carrots on cone 2 into a large bowl
Toss with veganaise and lemon juice
