BBQ Pineapple Chicken

Ingredients
  

  • 3 lbs chicken thighs
  • ½ cup pineapple juice
  • ½ cup soy tamari sauce
  • ¼ cup maple syrup
  • ⅓ cup ketchup
  • 2 tablespoons fresh grated ginger
  • 2 garlic cloves, minced
  • 1 tablespoon cornstarch
  • ¼ cup water
  • Fresh pineapple slices, for garnish

Method
 

  1. Sear chicken thighs in a hot skillet, 6–8 minutes until golden.
  2. In a saucepan, combine pineapple juice, tamari, maple syrup, ketchup, ginger, garlic, and sesame oil. Bring to a low simmer for 10 minutes.
  3. Whisk cornstarch and water into a slurry; stir into the sauce until thickened.
  4. Turn the chicken, pour sauce over top, and cook until bubbly. Garnish with pineapple slices.
