BBQ Pineapple Chicken
Ingredients:
3 pounds of chicken thighs
1/2 cup pineapple juice
1/2 cup soy tamari sauce
1/2 cup pineapple juice
1/2 cup soy tamari sauce
1/4 maple syrup
1/3 cup ketchup
2 tablespoons fresh ginger, grated cone #1
2 garlic cloves, minced cone #1
2 teaspoons toasted sesame oil
1 tablespoon cornstarch
1/4 water
Fresh pineapple slices, for garnish

Directions:
Preheat your electric skillet to 400°F arrange the chicken thighs in a single layer, sear for 6-8 min until golden
In a small saucepan, combine the pineapple juice, soy sauce, maple syrup, ketchup, grated ginger, minced garlic, and sesame oil over medium heat. Bring the mixture to a low simmer.
Simmer the sauce for 10 minutes, occasionally stirring, until slightly thickened.
In a small bowl, whisk together the cornstarch and water. Pour this slurry into the simmering sauce, whisking constantly until the sauce has thickened enough to coat the back of a spoon.
Turn the chicken over.
Pour the sauce over the chicken thighs, ensuring they are well coated.
Cook well until bubbly. Garnish with pineapple slices.
