Armenian Apricot Soup

This recipe features dried apricots, the national fruit of Armenia, which add a sweet flavor to the lentils.

The recipe was adapted from a cookbook called Please to the Table: The Russian Cookbook by Anya von Bremzen and John Welchman.

Ingredients

  • 1 T olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1/2 c dried apricots
  • 1 sweet potato diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 1/2 c quinoa
  • 1.5 c dried split lentils rinsed until water is clear
  • 7 c broth
  • 1 cup tomatoes
  • 1 t cumin
  • 1 t thyme
  • S&P
  • 1 lemon

Notes

*With Saladmaster cookware you can cut out the oil or add it as a finish at the end.

*Add lemon zest with the spices (optional).

*Feel free to skip some of the vegetables if you don’t have them in your fridge, or add others.
