Ingredients
  

  • 2 tablespoons coconut oil
  • 1 cup finely diced onion
  • 2 cups long-grain rice, washed and drained
  • ½ teaspoon salt
  • 1 tablespoon grated ginger
  • ½ cup coconut milk
  • 2½ cups water
  • 1 cup cooked peas
  • Optional garnish: toasted coconut, fresh cilantro or mint, lime zest and juice

Equipment

  • Medium saucepan with tight-fitting lid
  • Cutting board

Method
 

  1. Heat coconut oil over medium heat. Cook onion until softened and lightly browned, about 5 minutes.
  2. Add rice, salt, and ginger, stirring to coat. Let sizzle a minute, then add coconut milk and water.
  3. Bring to a simmer, cover tightly, and cook on low 20 minutes. Turn off heat and let rest 10 minutes.
  4. Fluff rice and stir in peas. Garnish as desired.
