My Favorite Salad Dressings

While olive oil, lemon, and salt go a long way, it's nice to switch up your salad routine now and then. Here's a whole collection of go-to dressings — creamy, tangy, spicy, and everything in between — to keep things interesting all year.

Ingredients
  

Tahini Maple Dressing (my favorite dressing ever — just stir together in a jar with a fork)
  • 2 tablespoons tahini
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons water (more as needed)
  • 2 tablespoons maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt or to taste
Ginger Garlic Miso Tahini Dressing
  • ⅓ cup tahini (or cashew butter)
  • 1 heaping tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 heaping teaspoon yellow or white miso paste
  • 1 tablespoon coconut aminos
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 teaspoons maple syrup
  • 2–3 tablespoons water
  • Pinch of sea salt
Lemon Garlic Cashew Sauce
  • ½ cup cashews
  • ½ cup olive oil
  • ½ cup water
  • 2 cloves garlic
  • Juice and zest of 1 lemon
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon pepper
Chia Honey Lemon (from Ali Maffucci's Inspiralized*)
  • 1 tablespoon chia seeds, soaked in ¼ cup water
  • 1 tablespoon honey
  • ¼ cup lemon juice and zest
  • 1 tablespoon olive oil
  • Fresh mint
Bitchin' At Home Sauce
  • ¾ cup raw almonds or almond flour
  • 1 cup water, divided
  • ⅓ cup fresh lemon juice
  • 2 cloves garlic
  • ¼ cup chopped onion
  • 2 teaspoons tamari (low-sodium)
  • 1 teaspoon apple cider vinegar
  • ¼ teaspoon each sea salt, cumin, coriander, smoked paprika
Almond Butter Sauce (great with zoodles, from Inspiralized*)
  • ½ cup almond butter
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon lime juice
  • Salt and pepper
Almond Butter Turmeric Dressing
  • ¼ cup almond butter
  • 1 cup water
  • 2 lemons, juiced
  • 2 tablespoons fresh grated ginger
  • 2 teaspoons turmeric
  • 2 tablespoons maple syrup
  • 1 teaspoon each salt and garlic powder
  • ¼ teaspoon black pepper
Turmeric Dressing
  • 4 cloves garlic
  • ¼ cup + 2 tablespoons olive or avocado oil
  • 3 tablespoons lemon juice
  • 2 teaspoons honey
  • 2 teaspoons turmeric
  • ½ teaspoon Dijon
  • 3 tablespoons hemp seeds, salt and pepper
Mustard Vinaigrette
  • 4–5 tablespoons apple cider vinegar or lemon juice
  • 2 tablespoons maple syrup
  • ¼ cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • Salt and pepper
Creamy Balsamic Dressing
  • ¼ cup tahini
  • ½ cup balsamic vinegar
  • ¼ cup water
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
Creamy Italian Dressing
  • ⅓ cup avocado
  • ½ cup dairy-free milk
  • ¼ cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Italian seasoning
  • 1 teaspoon garlic powder
  • ¾ teaspoon salt
Sesame Ginger Asian Dressing
  • ⅓ cup tahini
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons coconut aminos
  • ⅓ cup water
  • 2 tablespoons fresh grated ginger
  • 1 tablespoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon cayenne
Hazelnut Caesar Dressing
  • ⅓ cup hazelnuts
  • 2 cloves garlic
  • ¾ cup cashews, soaked 1 hour and drained
  • Juice and zest of 2 lemons
  • 2 tablespoons capers
  • 1 tablespoon apple cider vinegar
  • Sea salt and freshly ground black pepper
  • Water, for consistency
Chipotle Ranch Dressing
  • 1 cup raw cashews, pre-soaked
  • 1 cup water
  • 2 tablespoons garlic powder (or 2 tablespoons olive oil + 1 teaspoon garlic powder)
  • 2 tablespoons dried chives
  • 1 teaspoon chipotle powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • ½ teaspoon dried dill
Creamy Avocado Cilantro
  • 2 small avocados
  • 2 limes
  • ½ cup nut milk
  • ½ cup water
  • ¼ cup cilantro
  • 1½ teaspoons garlic powder
  • 1 teaspoon salt
  • ½ teaspoon cumin

Equipment

  • Measuring cups

  • Blender (for recipes that require blending)

Method
 

  1. Tahini Maple Dressing: just stir together in a jar with a fork.
  2. Lemon Garlic Cashew Sauce: Blend until smooth.
  3. Bitchin' At Home Sauce: Blend until smooth. A homemade take on the popular Bitchin' Sauce.
  4. Hazelnut Caesar Dressing: Pre-soak nuts 1 hour, drain, and blend all ingredients until smooth.
