
Sour Cherry Fava Bean Rice Salad
1 cup brown basmati rice (rinsed and cooked with 2 cups water in Saladmaster electric oil skillet on rice setting #1)
1.5 cups fava beans (cooked and skins peeled off)
1/4 teaspoon ground saffron threads and a pinch of sugar soaked in 2 tablespoons boiled water
1 cup toasted almond slivers (brown lightly in a dry pan on low)
1/2 cup of dried sour cherries
3 Tbs fresh dill
3 Tbs fresh mint
1 spring onion
4 Tbs olive oil
1 lemon, juice, and zest (cone 1)
1 garlic clove (cone 1)
1 tsp sea salt
1/2 tsp black pepper
