Purple Power Salad

Equipment

  • Saladmaster food processor
  • Pan for toasting

Ingredients

  • 3 tbsp olive oil
  • 1 pc lemon juice plus zest
  • 1 tbsp honey or maple syrup
  • 1 clove garlic
  • 1 tsp cinnamon ground
  • 2 tsp cumin ground
  • 1.5 tsp sea salt
  • 1 cup pumpkin seeds
  • 1/2 head red cabbage
  • 1 cup dried black mission figs chopped
  • 1 bunch carrots
  • 1 cup fresh parsley chopped
  • 1 cup fresh mint chopped

Instructions

  • Whiskdressing ingredients together and set aside.
  • Place cabbage, carrots, and herbs in a bowl.
  • Lightly toast pumpkin seeds until fragrant.
  • Add dressing, pumpkin seeds, and dried figs to salad and toss. Let rest for 30 min for flavors to meld.
